These sardines have reached their adult size and are fished in winter at the bolinche (near the coast) in the Bay of Biscay. They are larger and less fatty than the sardines that are usually found. Sardines, organic extra virgin olive oil, a pinch of salt, Organic Espelette pepper and that's it!
